Fancy s.th. sweet and healthy? Solution: Chickpea muffins!

Hey everyone,

So I thought I'd add some dessert ideas (of course they fit into a Dosirak box). Now I do love experimental cooking and baking every now and then, and so I came up with sugar-free chickpea-coconut-carrot muffins:



Now what I did was to mix 100g of chickpea flour, 2 minced medium carrots, one can of coconut milk, 50g of coconut flakes, 2 medium sized eggs, a pinch of spice (like this, which includes mango flakes and ginger) and two spoonful of agave sirup.




Put the dough into muffin forms and put them in the oven for 40 minutes with 150 degrees Celsius.

Voila!
